Pineapple Carpaccio with Crystallized Ginger
½ fresh pineapple – sliced into rings
½ cup of water
1 cup sugar
1 teaspoon cinnamon
1 ½ cups water
1 ½ cups sugar (plus a bit extra)
1 cup peeled and sliced fresh ginger
To make the syrup combine all ingredients until well-blended and put aside.
Combine water and 1 ½ cups sugar in a small saucepan and bring to a boil, add the ginger. Reduce heat and simmer for 20 minutes. With a spoon transfer the ginger to a wire rack and let dry and then roll the dried ginger slices in the extra sugar.
Arrange the pineapple slices on a serving plate and using a pastry brush, apply the syrup and then sprinkle with the crystallized ginger.
