Quality food has come a long way in Costa Rica. With the tourism industry recognizing the importance of serving up fine international cuisine, several Costa Rican chefs were recently awarded first place in a Latin American Gastronomy competition. The Triology Cup in Fusion Cuisine, 2010 was held in Venezuela at the beginning of October. Of the 65 teams that participated from ten countries, the Costa Rican chefs impressed a demanding panel of judges.

In the senior category the Costa Rican chefs received a silver medal and first place award for a combination dish that included pork tenderloin in a tamarind sauce, prawns with potatoes and a peach palm fruit cream. Costa Rica won the gold medal and first place in the “Dessert” category for a Parchita Parfait (a frozen dessert), Mango Babaroisse (Bavarian Cream), and a chocolate dessert for diabetics. In the junior category the Costa Rican chefs won a silver medal and second place award for a combination dish known as Napoleon Snapper in a honey and lime sauce, peach palm fruit cream and a three-cheese chicken roll and curry vegetables. The Costa Rica Tourism Board (ICT) sponsored the travel expenses of the Costa Rican chefs in order to support the development and professionalism of the local gastronomy sector.
